Ingredients

  • 2 tablespoons chili powder
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 2 teaspoons garlic salt
  • 2 pounds medium shrimp – peeled, deveined, and tails removed
  • 2 tablespoon nonstick cooking spray
  • 2 medium red bell peppers, thinly sliced
  • 2 medium orange bell peppers, thinly sliced
  • 2 medium red onions, thinly sliced
  • 2 (8 ounce) packages fajita-size flour tortillas, warmed

Instructions

  • In a medium-sized bowl, whisk together the chili powder, olive oil, lime juice, and garlic salt. Place the peeled, deveined, and tail-removed shrimp into the bowl and toss to evenly coat. Set aside to marinate for 10 minutes.
  • While the shrimp marinates, prepare your vegetables. Thinly slice the red and orange bell peppers and the red onions.
  • Heat a large skillet or griddle over medium-high heat. Spray with nonstick cooking spray and sauté the sliced bell peppers and onions for 7-8 minutes, or until tender. Transfer the sautéed vegetables to a bowl and cover with foil to keep warm.
  • Pour the marinated shrimp and the marinade into the same skillet. Cook the shrimp for approximately 2 minutes per side, or until they turn bright pink on the outside and the meat is opaque throughout.
  • Warm the fajita-size flour tortillas according to the package instructions.
