Ingredients

  • 10 pieces chicken thighs
  • 2 limes
  • 5 garlic cloves
  • 2 yellow onions
  • 1 orange
  • 1 bundle thyme
  • 4 cups chicken broth
  • 1/2 cup tomato paste
  • 1 teaspoon dried parsley
  • 1 heaped teaspoon black pepper
  • 4-5 tablespoons olive oil
  • 4 carrots
  • 2 teaspoons ground cumin
  • 2 cubes chicken bouillon
  • 1 heaped teaspoon salt

Instructions

In a large pot, heat the olive oil over medium heat.

Brown the chicken thighs on both sides until golden.

Remove the chicken from the pot and set aside.

Meanwhile, in a food processor or blender, combine the lime juice, garlic, onions, orange juice, thyme, parsley, pepper, cumin, salt, and chicken bouillon cubes.

Purée until smooth.

Return the chicken thighs to the pot and pour the marinade over them.

Add the chicken broth and tomato paste.

Bring to a boil, then reduce heat and simmer for 45 minutes, or until the chicken is cooked through.

While the chicken is simmering, peel and cut the carrots into chunks.

Add to the pot and cook for the last 15 minutes of cooking time.

Once the chicken is cooked, remove it from the pot and shred it.

Return the shredded chicken to the pot and stir to combine with the sauce.

Serve hot over rice or couscous.
