Ingredients

  • 1 1/8 cups whole wheat flour
  • 1 1/16 cups all-purpose flour
  • 1/16 cup wheat germ
  • 1 tablespoon ground flax seed
  • 1 tablespoon poppy seeds
  • 1 tablespoon dried onion flakes
  • 1/2 tablespoon parsley flakes
  • 1/2 tablespoon dried basil
  • 1/2 tablespoon dried oregano
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon smoked paprika
  • 1/8 teaspoon cayenne pepper
  • 7/8 cup water
  • 1/4 cup extra-virgin olive oil
  • 1 tablespoon sesame oil
  • kosher salt to taste

Instructions

  • Preheat your oven to a temperature of 350 degrees Fahrenheit (175 degrees Celsius to get it ready for baking.
  • In a big bowl, mix together the whole wheat flour, all-purpose flour, wheat germ, flax seed, poppy seeds, onion flakes, parsley flakes, basil, oregano, garlic salt, baking powder, smoked paprika, and cayenne pepper. Make sure the dry ingredients are well combined.
  • Prepare the wet ingredients by whisking together the water, olive oil, and sesame oil in a separate basin.
  • Add the wet components to the dry components and combine them until the mixture is only just moist and simple to handle. Form the dough into a ball, then divide it into four equal parts.
  • Take two portions of the dough and roll them out thinly. Put the dough sheets on baking sheets that haven’t been greased. Use a fork or dough docker to puncture the dough, then cut it into squares of the desired size using a pizza cutter or pastry edger. Include some kosher salt to taste.
  • Bake the crackers for 12 to 15 minutes in the preheated oven, or until they are golden brown. Keep a close eye on them to prevent burning. Take them out of the oven and place them on wire racks to cool.
  • Repeat this process with the remaining dough by rolling, pricking, cutting, and baking the other two portions.
