Ready Time

40 mins

8 servings

  • 2 cups all-purpose flour
  • 1/2 cup whole wheat flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 cup cold unsalted butter, cut into small pieces
  • 1/4 cup ice-cold water
  • 1 egg, beaten (for egg wash)
  • Optional: sesame seeds, poppy seeds, or dried herbs for topping

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. In a large bowl, whisk together the all-purpose flour, whole wheat flour, salt, sugar, baking powder, and baking soda.

Add the cold butter to the dry ingredients and use a pastry blender or your fingertips to work the butter into the flour mixture until it resembles coarse crumbs.

Gradually add the ice-cold water, stirring the mixture with a fork until it forms a shaggy dough. Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together.

Roll the dough out to a thickness of about 1/8 inch (3 mm) and use a cookie cutter or the rim of a glass to cut out crackers.

Place the crackers on the prepared baking sheet, leaving about 1 inch (2.5 cm) of space between each cracker. Brush the tops of the crackers with the beaten egg for a golden glaze.

If desired, sprinkle with sesame seeds, poppy seeds, or dried herbs for added flavor and texture.

Bake the crackers for 18-20 minutes, or until they’re crispy and golden brown. Remove the crackers from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Serve warm, or store the crackers in an airtight container for up to 5 days.

Use a light touch when kneading the dough, as overworking can lead to tough crackers.

If the dough is too sticky, add a little more all-purpose flour.

Conversely, if it’s too dry, add a little more ice-cold water.

For an extra crispy cracker, bake for the full 20 minutes.

If you prefer a slightly chewier cracker, bake for 18 minutes.

To ensure even browning, rotate the baking sheet halfway through baking time.

For added flavor, try using different seasonings or herbs in the dough, such as dried thyme or garlic powder.

To make the crackers more visually appealing, use a variety of toppings, such as sesame seeds, poppy seeds, and dried herbs, or get creative with a mixture of different toppings.
