- 6 cups vegetable stock
- 3 cups quinoa
- ⅓ cup olive oil
- 1 large butternut squash – peeled, seeded, and diced
- 3 small zucchinis, cut into 1-inch cubes
- 1½ cups chopped green onions
- 1½ cups diced dried apricots
- 1½ cups dried cranberries
- 1½ cups chopped fresh parsley
- 1½ – 2 limes, juiced, or to taste
Instructions
In a medium saucepan, bring the vegetable stock to a rolling boil. Reduce heat to low, add the quinoa, cover, and simmer until the liquid is absorbed, about 10-15 minutes.
Remove from heat and set aside.
Meanwhile, heat the olive oil in a large skillet over medium heat. Add the diced butternut squash and zucchini and sauté until slightly browned, approximately 10 minutes.
Once the quinoa and vegetables are cooked, combine them in a large bowl.
Stir in the chopped green onions, dried apricots, cranberries, and fresh parsley. For a zesty flavor, drizzle in the juice of 1 1/2 to 2 limes, to your preferred taste.
Mix well to evenly distribute the lime juice and combine all ingredients.
