Ingredients

  • Rolled Oats: 1 cup (7 oz)
  • Pumpkin Puree: 1/2 cup (4 oz)
  • Unsweetened Almond Milk: 2 cups (16 oz)
  • Ground Cinnamon: 1/2 teaspoon
  • Ground Ginger: 1/4 teaspoon
  • Ground Nutmeg: 1/4 teaspoon
  • Salt: 1/4 teaspoon
  • Pecans, Chopped: 1/4 cup (1 oz)
  • Pumpkin Seeds: 1/4 cup (1 oz)
  • Flax Seeds, Ground: 1/4 cup (1 oz)
  • Honey or Maple Syrup (optional): to taste

Instructions

Instructions: Set a medium saucepan over medium heat. Add the rolled oats, pumpkin puree, almond milk, ground cinnamon, ginger, nutmeg, and salt.

Bring to a simmer, stirring occasionally.

Reduce heat to low, cover, and cook for about 5 minutes, or until the oats are tender and have absorbed most of the liquid. While the oatmeal cooks, toast the pecans and pumpkin seeds in a small skillet over medium heat until fragrant, about 3-4 minutes.

Set aside to cool slightly.

Once the oatmeal is cooked, stir in the toasted pecans, pumpkin seeds, and ground flax seeds. Taste and adjust the sweetness with honey or maple syrup, as desired.

Serve the warm pumpkin spice oatmeal in bowls and enjoy with your favorite toppings, such as yogurt, fruit, or additional nuts and seeds.

Notes

  • For a creamier oatmeal, use whole or 2% milk instead of almond milk.
  • Add 1/4 cup of raisins or dried cranberries for extra sweetness and texture.
  • If you don’t have ground flax seeds, you can substitute chia seeds or oats blended into a fine powder.
  • The type of spice you use can significantly impact the flavor. For a richer, bolder taste, use pumpkin pie spice.
  • To make ahead, prepare the oatmeal according to the instructions and store it in an airtight container in the refrigerator for up to 4 days. Reheat over medium heat or in the microwave before serving.
