Dried Shiitake Mushrooms

Fresh Mushrooms, sliced

Instructions

In a small bowl, combine the dried shiitake mushrooms with hot water. Allow them to soak for 15 minutes, or until softened.

Remove the mushrooms from the water and finely chop them.In a large skillet or wok, heat the vegetable oil over medium-high heat.

Add the chicken breasts to the skillet and cook until browned on all sides. Remove the chicken from the skillet and set aside.Add the fresh mushrooms to the skillet and cook until softened.

Add the chopped shiitake mushrooms, soy sauce, chicken stock, hoisin sauce, sugar, sesame oil, and white vinegar to the skillet.

Bring the mixture to a boil, then reduce heat and simmer for 5 minutes.In a small bowl, whisk together the cornstarch and water until smooth. Add the cornstarch mixture to the skillet and stir until the sauce thickens.Add the cooked chicken back to the skillet and stir to coat with the sauce.

Garnish with sesame seeds and green onions.

Serve over rice or noodles.
