Ingredients

  • 2 cups skin-on, whole green lentils (sabut moong dal)
  • 1 cup uncooked white rice
  • 8 green chile peppers
  • 2 (1/2 inch) pieces fresh ginger root, peeled
  • 1 tablespoon cumin seeds
  • 1 tablespoon salt
  • cooking spray
  • 6 tablespoons chopped onion (Optional)

Instructions

To prepare Green Gram Crepes, first soak the lentils and rice in water for 4 hours or overnight.

Next, blend the lentils, rice, green chilies, and ginger into a smooth paste using a blender or food processor.

Stir in the cumin seeds and salt.

Heat a flat griddle or skillet over medium-low heat and grease it with cooking spray.

Pour a ladleful of the lentil batter onto the hot surface and spread it into a thin circle using the back of the ladle.

If desired, sprinkle with chopped onions and press them onto the crepe using a ladle or spatula.

Cook the crepe for a few minutes, then flip it over and cook the other side for a few more minutes.

Transfer the cooked crepe to a plate and serve it immediately while it’s hot and crispy.

Repeat the process with the remaining batter to make 9 crepes.
