  • 1 1/2 cups granulated sugar
  • 1/2 cup light corn syrup
  • 1/2 cup sweetened condensed milk
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon salt
  • 1/4 teaspoon unsalted butter
  • 1/2 teaspoon vanilla bean paste or 1/2 vanilla bean, split lengthwise


Line an 8-inch square baking dish with parchment paper or aluminum foil, leaving some overhang for easy removal.

In a medium saucepan, combine the sugar, corn syrup, and sweetened condensed milk.

Place the saucepan over medium heat and cook, stirring occasionally, until the sugar has dissolved.

Bring the mixture to a boil, then reduce the heat to medium-low and simmer for 10-12 minutes, or until the mixture reaches 235°F on a candy thermometer.

Remove the saucepan from the heat and stir in the vanilla extract, salt, and butter until the butter has melted.

Let the mixture cool slightly, until it reaches 115°F to 120°F.

This is important, as it will help the fudge set properly.

Stir in the vanilla bean paste or scrape the seeds from the vanilla bean into the mixture and stir until well combined.

Pour the fudge mixture into the prepared baking dish and smooth the top with a spatula.

Let the fudge cool to room temperature, then refrigerate it until chilled.
