  • 1 medium yellow onion, thinly sliced
  • 1 pound mixed wild mushrooms, such as shiitake, oyster and cremini
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 4 cups chicken broth
  • 2 cups vegetable broth
  • 1 bunch kale, stems removed, leaves torn into bite-sized pieces
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste


Heat the olive oil in a large pot over medium heat.

Add the onions and cook until they are golden brown and caramelized, about 15 minutes.

Add the mushrooms and cook until they are softened and browned, about 5 minutes.
