Ingredients

  • 1 1/2 cups watermelon chunks (from about 2 pounds of watermelon)
  • 1 cup white wine (such as Pinot Grigio or Sauvignon Blanc)
  • 1/2 cup sparkling water
  • 1/4 cup simple syrup (equal parts water and granulated sugar, dissolved)
  • Juice of 1 lime
  • Slices of lime and watermelon for garnish

Instructions

In a large pitcher, combine the watermelon chunks and white wine.

Let it infuse in the refrigerator for at least 2 hours or overnight to allow the flavors to meld.

After the infusion, strain the mixture through a fine-mesh sieve into a large bowl, pressing on the solids to extract as much liquid as possible.

Discard the solids.

Add the simple syrup and lime juice to the bowl and stir until the syrup is dissolved.

Chill the mixture in the refrigerator for at least 30 minutes to allow the flavors to combine.

Just before serving, stir in the sparkling water.

To serve, pour the sangria into glasses filled with ice.

Garnish with a slice of lime and a few chunks of watermelon.

Notes

For a lighter flavor, use a lighter white wine like Pinot Grigio, and for a bolder flavor, use a Sauvignon Blanc. If you’re short on time, 30 minutes of infusion will still yield a great flavor, but the longer you let it infuse, the deeper the flavors will meld.

Don’t press too hard on the solids when straining or you’ll end up with a cloudy sangria.

You can also add other fruits like strawberries or blueberries to the infusion for added flavor and color. To make ahead, prepare the sangria up to the addition of sparkling water, then refrigerate for up to 2 days.

Add the sparkling water just before serving for the best flavor.

You can adjust the amount of simple syrup to your taste, depending on how sweet you like your sangria.
