  • Watermelon chunks (about 2 cups)
  • Fresh mint leaves (about 1/4 cup)
  • Lime wedges (5-6)
  • White rum (2 1/2 ounces)
  • Club soda (1 1/2 cups)
  • Lime juice (2 tablespoons)
  • Simple syrup (1 tablespoon)
  • Ice


Muddle the fresh mint leaves and watermelon chunks in a large pitcher until the leaves are well-bruised and the watermelon is crushed.

Add the white rum, lime juice, and simple syrup to the pitcher and stir to combine.

Chill the mixture in the refrigerator for at least 30 minutes.

Just before serving, stir in the club soda.

Fill glasses with ice and pour the mojito mixture over the ice.

Stir gently and garnish with a sprig of fresh mint, a lime wedge, and a few chunks of watermelon.
