  • 2 cups diced seedless watermelon (about 1 small to medium melon)
  • 1 cup diced fresh tomatoes (about 2 large tomatoes)
  • 1 cup diced red bell pepper
  • 1/2 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1 jalapeño pepper, seeded and finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 2 tablespoons freshly squeezed lime juice
  • Salt and pepper, to taste

In a blender or food processor, combine diced watermelon, tomatoes, red bell pepper, red onion, cilantro, jalapeño pepper, and garlic.

Blend until smooth.

Heat the olive oil in a large saucepan over medium heat.

Pour the blended mixture into the saucepan and stir to combine.

Add the freshly squeezed lime juice to the saucepan and stir to combine.

Season with salt and pepper to taste.

Bring the mixture to a simmer and let cook for 10-15 minutes or until the flavors have melded together and the soup has slightly thickened.

Remove from heat and let cool to room temperature.

Chill in the refrigerator for at least 30 minutes before serving.

Serve chilled, garnished with additional cilantro if desired.

For a more intense flavor, use a ripe but firm watermelon.

You can also add a splash of sparkling water for a refreshing twist on this recipe.

If you’re not a fan of spicy food, reduce or omit the jalapeño pepper.

This recipe is perfect for a hot summer day, as it’s light, refreshing, and packed with nutrients.

You can also make it a day ahead to allow the flavors to meld together even more.

Don’t over-blend the mixture, as it can become too smooth and lose its texture.

If you want a clearer soup, strain it through a fine-mesh sieve before serving.

Finally, feel free to customize to your taste by adding a splash of cream or a sprinkle of crumbled feta cheese.
