4 servings

  • 12 oz (340g) cheese-filled tortellini
  • 1 cup (250g) mixed spring vegetables (such as bell peppers, carrots, zucchini, green beans, cherry tomatoes)
  • 2 tbsp (30g) olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup (250ml) chicken broth
  • 1/2 cup (120ml) heavy cream
  • 1 tsp (5g) dried basil
  • 1 tsp (5g) dried parsley
  • Salt and pepper, to taste
  • Grated Parmesan cheese, for serving

Bring a large pot of salted water to a boil and cook the tortellini according to the package instructions until al dente, then set aside. In a large skillet, heat the olive oil over medium-high heat.

Add the chopped onion and cook for 3-4 minutes, until translucent.

Add the minced garlic and cook for an additional minute, until fragrant. Add the mixed spring vegetables to the skillet and cook for 4-5 minutes, until tender-crisp.

In a small bowl, whisk together the chicken broth and heavy cream.

Add the dried basil, parsley, salt, and pepper to the bowl and whisk until well combined. Add the cooked tortellini to the skillet with the vegetables and pour in the chicken broth mixture.

Toss everything together until the tortellini is well coated.

Season with salt and pepper to taste. Serve hot, topped with grated Parmesan cheese.

Tortellini Primavera is a colorful and delicious dish perfect for spring, so be sure to use the freshest vegetables available. Use any combination of spring vegetables you like, but bell peppers, carrots, zucchini, green beans, and cherry tomatoes work beautifully.

If you want to make this dish ahead, cook the tortellini and vegetables, then refrigerate or freeze until ready to assemble.

Stir in the chicken broth mixture just before serving to keep the cream from separating. For an extra burst of flavor, add some grilled chicken or toasted pine nuts on top of the Parmesan cheese.

You can also customize the dish to your taste by adding other favorite vegetables or herbs, like asparagus, spinach, or thyme.

Since this recipe makes 4 servings, feel free to adjust the ingredient quantities based on your gathering size. And don’t forget to serve immediately, as the cream sauce will start to thicken quickly.
