Yields

7 servings

Ingredients

  • 1 1/2 pounds boneless, skinless chicken breast or thighs, cut into 1 1/2-inch pieces
  • 1 cup pineapple chunks
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 1 onion, cut into 1-inch pieces
  • 1/2 cup teriyaki sauce
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 7 bamboo skewers, soaked in water for 30 minutes

Instructions

Preheat your grill to medium-high heat.

Thread chicken, pineapple, red bell pepper, yellow bell pepper, and onion onto the bamboo skewers, leaving a little space between each piece.

In a small bowl, whisk together teriyaki sauce, olive oil, garlic, cumin, smoked paprika, salt, and pepper.

Brush the mixture evenly onto both sides of the skewers.

Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and slightly charred.

Serve hot and garnish with fresh cilantro, if desired.

Notes

Make sure to soak those bamboo skewers for at least 30 minutes before grilling to prevent them from burning.

You can also prep your veggies and chicken ahead of time, just be sure to keep them separate until you’re ready to assemble the skewers.

If using wooden skewers, you can assemble them up to a day in advance, cover, and refrigerate.

For extra flavor, let the skewers marinate in the teriyaki sauce mixture for 30 minutes to an hour before grilling.

Don’t overcrowd the skewers, leaving a little space between each piece allows for even cooking.

If you prefer a more intense char, grill for the full 12 minutes, but keep an eye on them to prevent burning.

Serve immediately, garnished with fresh cilantro for a pop of freshness and color.
