7 servings

  • 1 1/2 pounds mixed color bell peppers, cut into 1-inch pieces
  • 1 large red onion, cut into 1-inch pieces
  • 2 large zucchinis, cut into 1-inch slices
  • 2 large yellow squash, cut into 1-inch slices
  • 1 large eggplant, cut into 1-inch pieces
  • 1 cup cherry tomatoes, halved
  • 1/4 cup Kalamata olives, pitted
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 10-12 bamboo skewers, soaked in water for at least 30 minutes

Preheat your grill to medium-high heat.

Thread the bell peppers, onion, zucchinis, squash, and eggplant onto the bamboo skewers, leaving a little space between each piece.

In a small bowl, whisk together the olive oil, lemon juice, and dried oregano.

Brush the mixture evenly onto both sides of the vegetables.

Season with salt and pepper to taste.

Place the skewers onto the grill and cook for 10-12 minutes, turning occasionally, or until the vegetables are tender and lightly charred.

While the skewers are grilling, alternate the cherry tomatoes and Kalamata olives onto a separate plate or platter.

Once the skewers are done, place them on top of the tomato and olive mixture.

Sprinkle the crumbled feta cheese over the top and serve hot.

For a pop of color, use a mix of bell peppers in different colors.

If using wooden skewers, make sure to soak them in water for at least 30 minutes to prevent them from burning on the grill.

To make this recipe more substantial, serve with a side of quinoa or grilled pita bread and a simple green salad.

You can also customize your skewers to your liking – feel free to add or substitute your favorite vegetables or cheese.

Keep an eye on the skewers while they’re grilling, as the cooking time may vary depending on your grill and the tenderness of the vegetables.

Prepare the cherry tomatoes and olives ahead of time and store them in the refrigerator until ready to assemble.
