Ingredients

  • 1 1/2 pounds mixed color bell peppers, cut into 1-inch pieces

  • 2 large zucchinis, cut into 1-inch slices
  • 2 large yellow squash, cut into 1-inch slices
  • 1 large eggplant, cut into 1-inch pieces
  • 1 cup cherry tomatoes, halved
  • 1/4 cup Kalamata olives, pitted
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 10-12 bamboo skewers, soaked in water for at least 30 minutes

Instructions

Preheat your grill to medium-high heat.

Thread the bell peppers, onion, zucchinis, squash, and eggplant onto the bamboo skewers, leaving a little space between each piece.

In a small bowl, whisk together the olive oil, lemon juice, and dried oregano.

Brush the mixture evenly onto both sides of the vegetables.

Season with salt and pepper to taste.

Place the skewers onto the grill and cook for 10-12 minutes, turning occasionally, or until the vegetables are tender and lightly charred.

While the skewers are grilling, alternate the cherry tomatoes and Kalamata olives onto a separate plate or platter.

Once the skewers are done, place them on top of the tomato and olive mixture.

Sprinkle the crumbled feta cheese over the top and serve hot.
