  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp Dijon mustard

Instructions

Rinse the chickpeas and drain well. In a large bowl, combine the chickpeas, cucumber, cherry tomatoes, feta cheese, red onion, and parsley.
