  • 1 1/2 cups cooked chickpeas
  • 1/2 cup chopped cucumber
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup crumbled grilled halloumi cheese
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper, to taste
  • 6-8 pita bread, sliced (for serving)


Preheat your grill or grill pan to medium-high heat. Cut the halloumi cheese into slices, about 1 inch thick.

Grill the halloumi for 2-3 minutes per side, or until nicely charred and slightly softened.

Let it cool down. In a large bowl, combine the cooked chickpeas, chopped cucumber, cherry tomatoes, red onion, and parsley.

In a small bowl, whisk together the olive oil, garlic, lemon juice, Dijon mustard, salt, and pepper.

Pour the dressing over the chickpea mixture and toss to coat. Once the grilled halloumi has cooled, crumble it into the bowl and gently toss to combine.

Taste and adjust the seasoning as needed.

To serve, place a spoonful of the chickpea salad onto a sliced pita bread and top with additional parsley if desired. Repeat with the remaining ingredients.

Refrigerate or serve immediately.


For the grilled halloumi, you can also use a broiler if you don’t have a grill or grill pan, just keep an eye on it so it doesn’t burn.

Don’t overmix the chickpea mixture, you want to keep it light and refreshing.

If you want to make it ahead, prepare everything except the halloumi, then crumble and combine just before serving to keep the cheese fresh.
