Ingredients

  • 1 pound boneless, skinless chicken breast, cut into small pieces
  • 1 ripe mango, diced
  • 1 head of lettuce, leaves separated

  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 teaspoon grated lime zest
  • 2 tablespoons freshly squeezed lime juice
  • Salt and pepper, to taste
  • 4 small flour tortillas (optional)

Instructions

In a medium bowl, whisk together soy sauce, honey, lime zest, and lime juice. Add the chicken pieces and marinate for at least 15 minutes, or up to 30 minutes in the refrigerator.

In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.

Remove the chicken from the marinade, letting any excess liquid drip off. Add the chicken to the skillet and cook until browned and cooked through, about 5-7 minutes.

Add the remaining 1 tablespoon of olive oil to the skillet.

Add the minced garlic and grated ginger and cook for 1 minute, until fragrant. Add the diced mango to the skillet and cook for an additional 2-3 minutes, until slightly softened.

Season the chicken and mango mixture with salt and pepper to taste.

To assemble the lettuce wraps, place a portion of the chicken and mango mixture onto a lettuce leaf. Sprinkle with chopped cilantro and serve immediately.

If desired, serve with small flour tortillas on the side.

Notes

Use the ripest mango you can find for the best flavor. If you can’t find ripe, let it sit at room temperature for a few days to speed up the ripening process.

Don’t overcrowd the skillet when cooking the chicken.
