Yields

8 servings

Ingredients

  • 1 1/2 pounds boneless skinless chicken breasts, cut into 1-inch pieces
  • 1 cup peaches, sliced
  • 1/2 cup jalapeno peppers, sliced
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 1/4 cup honey
  • 1/4 cup apple cider vinegar
  • 2 tablespoons Dijon mustard
  • Fresh cilantro leaves, chopped (optional)

Instructions

Preheat your grill or grill pan to medium-high heat.

In a large bowl, whisk together olive oil, garlic, cumin, smoked paprika, salt, and pepper.

Add the chicken to the bowl and toss to coat.

Grill the chicken for 5-7 minutes per side, or until cooked through.

Transfer the chicken to a plate and cover with foil to keep warm.

In the same grill or grill pan, add the sliced jalapenos and cook for 2-3 minutes per side, or until slightly charred.

Remove the jalapenos from the grill and set aside.

In a small bowl, whisk together honey, apple cider vinegar, and Dijon mustard.

Brush the mixture onto the grilled chicken during the last minute of cooking.

To assemble, place the grilled chicken on a serving platter or individual plates.

Top with sliced peaches and jalapenos.

Sprinkle chopped cilantro leaves on top, if desired.

Serve immediately and enjoy!

Notes

For a more intense flavor, use 3-4 cloves of garlic instead of 2.

If you like a little more heat, add more jalapenos or use hotter peppers like habaneros.

If using wooden skewers, be sure to soak them in water for at least 30 minutes before grilling to prevent burning.

Peach slices can be substituted with nectarines or plums, but peaches work best due to their sweetness.

If you don’t have apple cider vinegar, you can substitute with balsamic vinegar or white wine vinegar.

For a vegetarian option, replace chicken with portobello mushrooms or extra-firm tofu, marinated in the same mixture before grilling.
