Ready Time

40 mins

7 servings

  • 1 cup mixed color bell peppers, cut into 1-inch pieces
  • 7 bamboo skewers, soaked in water for at least 30 minutes
  • 1 large red onion, cut into 1-inch pieces
  • 1 large zucchini, cut into 1-inch slices
  • 1 large yellow squash, cut into 1-inch slices
  • 1 large red bell pepper, cut into 1-inch pieces
  • 2 large portobello mushrooms, stems removed and caps cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Preheat your grill to medium-high heat. Thread a piece of each vegetable, leaving a little space between each piece, onto the bamboo skewers.

You can alternate the vegetables in a pattern or create your own design.

In a small bowl, whisk together the olive oil, garlic, dried oregano, salt, and black pepper. Brush the mixture evenly onto both sides of the vegetables on the skewers.

Place the kebabs on the grill and cook for 10-12 minutes, turning occasionally, until the vegetables are tender and lightly charred.

Serve hot, garnished with fresh herbs if desired.

Use any color bell peppers you like, or a mix for a rainbow effect.

Bamboo skewers can be reused if you soak and wash them after use.

Cut veggies into similar sizes so they cook evenly.

Portobello mushrooms have a meaty texture that pairs well with the crunch of veggies.

Olive oil helps bring out the natural flavors of the veggies, while garlic adds a punch.

Dried oregano adds an earthy flavor, but feel free to sub with other herbs like basil or thyme.

Don’t overcrowd the skewers, leaving space for even cooking and a nice presentation.

Grill time may vary depending on your grill’s heat and veggie thickness, so keep an eye on them! Serve as a side dish or add to your favorite salads or grain bowls.

Perfect for a quick and healthy snack, lunch, or dinner.
