  • 1 large yellow squash, cut into 1-inch slices
  • 1 large red bell pepper, cut into 1-inch pieces
  • 2 large portobello mushrooms, stems removed and caps cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

Preheat your grill to medium-high heat. Thread a piece of each vegetable, leaving a little space between each piece, onto the bamboo skewers.

You can alternate the vegetables in a pattern or create your own design.

In a small bowl, whisk together the olive oil, garlic, dried oregano, salt, and black pepper. Brush the mixture evenly onto both sides of the vegetables on the skewers.
