  • For the shrimp skewers:
  • 1 pound large shrimp, peeled and de-veined
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons freshly squeezed lime juice
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/4 cup chopped fresh cilantro
  • 20 bamboo skewers, soaked in water for at least 30 minutes
  • For the pineapple salsa:
  • 2 cups diced fresh pineapple
  • 1 cup diced red onion
  • 1 cup diced fresh mango
  • 1 jalapeño pepper, seeded and finely chopped
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons freshly squeezed lime juice
  • Salt to taste


Preheat your grill to medium-high heat. In a medium bowl, whisk together the yogurt, lime juice, honey, mustard, smoked paprika, salt, black pepper, and cayenne pepper (if using).

Add the chopped cilantro and mix well.

Add the shrimp to the bowl and toss to coat with the yogurt marinade. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes or up to 2 hours.

Thread 4-5 shrimp onto each bamboo skewer, leaving a small space between each shrimp.

Grill the skewers for 8-10 minutes, turning occasionally, or until the shrimp are pink and cooked through. While the shrimp are grilling, prepare the pineapple salsa.

In a large bowl, combine the diced pineapple, red onion, mango, jalapeño pepper, and chopped cilantro.

Squeeze the lime juice over the top and toss to combine. Season with salt to taste.

Once the shrimp skewers are cooked, serve immediately with a side of pineapple salsa.

Serve 2-3 skewers per person.


For the shrimp marinade, you can adjust the amount of cayenne pepper to your desired level of spiciness. If you’re not a fan of spicy food, simply omit it or reduce the amount.
