  • 1 pound large shrimp, peeled and deveined

  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper

  • 10 bamboo skewers, soaked in water for at least 30 minutes

Instructions

Preheat your grill to medium-high heat.

In a large bowl, whisk together lemon juice, garlic, olive oil, parsley, Dijon mustard, kosher salt, black pepper, and red pepper flakes (if using).

Add the shrimp to the bowl and toss to coat with the marinade.

Cover the bowl with plastic wrap and refrigerate for at least 30 minutes or up to 2 hours.

Remove the shrimp from the refrigerator about 10 minutes before grilling to let them come to room temperature.

Thread 2-3 shrimp onto each bamboo skewer, leaving a little space between each shrimp.

Place the skewers on the grill and cook for 2-3 minutes per side, or until the shrimp are pink and cooked through.

Serve immediately, garnished with additional parsley if desired.

Notes

For freshest flavor, use freshly squeezed lemon juice and high-quality olive oil. Make sure to not overcrowd the skewers, as this can cause the shrimp to steam instead of sear.

If using red pepper flakes, adjust the amount to your desired level of heat.

Don’t overmarinate the shrimp, as they can become mushy. For easy serving, consider serving the skewers with a side of rice, quinoa, or roasted vegetables.
