  • For the salad:
  • 1 1/2 pounds large shrimp, peeled and de-veined
  • 10 cups romaine lettuce, chopped
  • 2 cups cherry tomatoes, halved
  • 1 cup cucumber, sliced
  • 1 cup crumbled blue cheese
  • 1/2 cup chopped red onion
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh dill
  • For the vinaigrette:
  • 1/2 cup olive oil
  • 1/4 cup white wine vinegar
  • 2 tablespoons Dijon mustard
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Preheat your grill to medium-high heat.

In a large bowl, whisk together olive oil, white wine vinegar, Dijon mustard, and dried thyme.

Season the vinaigrette with salt and pepper to taste.

Set aside.

In a separate bowl, toss the shrimp with a pinch of salt and pepper.

Grill the shrimp for 2-3 minutes per side, or until they’re pink and cooked through.

Let them cool.

In a large serving bowl, combine the chopped romaine lettuce, halved cherry tomatoes, sliced cucumber, crumbled blue cheese, chopped red onion, chopped parsley, and chopped fresh dill.

Once the shrimp have cooled, chop them into bite-sized pieces and add them to the salad bowl.

Drizzle the vinaigrette over the top and toss the salad gently to combine.

Serve immediately and divide among 5 plates.

For a lighter vinaigrette, use 1/3 cup olive oil and 1/4 cup white wine vinegar.

If you prefer a stronger flavor, stick with the original amounts.

To make ahead, prep all the veggies and store them in separate containers.

Grill the shrimp just before assembling the salad.

If using frozen shrimp, thaw them first and pat dry with paper towels before grilling to remove excess moisture.

For an added crunch, top the salad with chopped pecans or walnuts.

Feel free to customize with your favorite protein – grilled chicken, salmon, or tofu work great too! Make it a meal prep salad by preparing individual portions in containers, then top with the vinaigrette just before serving.
