Ingredients

  • For the salad:
  • 1 1/2 pounds large shrimp, peeled and de-veined
  • 10 cups romaine lettuce, chopped
  • 2 cups cherry tomatoes, halved
  • 1 cup cucumber, sliced
  • 1 cup crumbled blue cheese
  • 1/2 cup chopped red onion
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh dill
  • For the vinaigrette:
  • 1/2 cup olive oil
  • 1/4 cup white wine vinegar
  • 2 tablespoons Dijon mustard
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

Preheat your grill to medium-high heat.

In a large bowl, whisk together olive oil, white wine vinegar, Dijon mustard, and dried thyme.

Season the vinaigrette with salt and pepper to taste.

Set aside.

In a separate bowl, toss the shrimp with a pinch of salt and pepper.

Grill the shrimp for 2-3 minutes per side, or until they’re pink and cooked through.

Let them cool.

In a large serving bowl, combine the chopped romaine lettuce, halved cherry tomatoes, sliced cucumber, crumbled blue cheese, chopped red onion, chopped parsley, and chopped fresh dill.

Notes

For a lighter vinaigrette, use 1/3 cup olive oil and 1/4 cup white wine vinegar.

If you prefer a stronger flavor, stick with the original amounts.
