  • 1 1/2 pounds large shrimp, peeled and de-veined
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 1 onion, cut into 1-inch pieces
  • 2 cloves of garlic, minced
  • 1 zucchini, cut into 1-inch slices
  • 1 cup of cherry tomatoes, halved
  • 1/4 cup of olive oil
  • 2 tablespoons of freshly squeezed lemon juice
  • 1 teaspoon of Dijon mustard
  • Salt and pepper, to taste
  • 10-12 bamboo skewers, soaked in water for at least 30 minutes


Preheat your grill to medium-high heat. Meanwhile, in a large bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper.

Add the shrimp, bell peppers, onion, garlic, zucchini, and cherry tomatoes to the bowl, making sure they’re well coated with the marinade.

Thread the marinated ingredients onto the bamboo skewers, leaving a little space between each piece. You should end up with 10-12 skewers.

Place the skewers on the grill and cook for 8-10 minutes, turning occasionally, or until the shrimp are pink and cooked through.

Make sure to soak the bamboo skewers in water for at least 30 minutes before grilling to prevent them from burning. If using wooden skewers, you can also brush them with a little oil to prevent sticking.
