Ready Time

2 hrs 20 mins

5 servings

  • For the salmon skewers:
  • 1 pound salmon fillet, cut into 1-inch cubes
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon lemon zest
  • 1 tablespoon freshly squeezed lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 10 bamboo skewers, soaked in water for 30 minutes
  • For the avocado salsa:
  • 3 ripe avocados, diced
  • 1/2 cup red onion, diced
  • 1 jalapeño pepper, seeded and finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon freshly squeezed lime juice
  • Salt and pepper to taste

Preheat your grill to medium-high heat.

Thread the salmon cubes onto the bamboo skewers, leaving a small space between each piece.

In a small bowl, whisk together olive oil, garlic, lemon zest, lemon juice, salt, and black pepper.

Brush the mixture evenly onto both sides of the salmon cubes.

Place the salmon skewers on the grill and cook for 4-5 minutes per side, or until cooked through.

Remove the skewers from the grill and let them rest for a few minutes.

While the salmon is cooking, prepare the avocado salsa.

In a medium bowl, combine diced avocado, red onion, chopped jalapeño, and chopped cilantro.

Squeeze the lime juice over the top and toss gently to combine.

Season with salt and pepper to taste.

To serve, place a grilled salmon skewer on each plate and top with a spoonful of the avocado salsa.

Serve immediately and garnish with additional cilantro if desired.

Make sure to soak those bamboo skewers in water for at least 30 minutes before grilling to prevent them from catching fire. For the salmon, try to cut the cubes as uniform as possible so they cook evenly.

Don’t overcrowd the skewers, leaving a small space between each piece ensures they cook properly.

If you’re not a big fan of spicy food, you can reduce or omit the jalapeño pepper in the avocado salsa. To prevent the avocado from browning, sprinkle a little lime juice over it after dicing.

You can also make the salsa ahead of time, just cover it tightly with plastic wrap and refrigerate for up to 2 hours.

For a fancy touch, garnish with additional cilantro and a slice of lime on top of the salmon.
