Ready Time

Yields

9 servings

Ingredients

  • 2 pounds boneless, skinless chicken breasts, cut into 1-inch pieces
  • 9 bamboo skewers, soaked in water for at least 30 minutes
  • 1 ripe pineapple, cut into 1-inch chunks
  • 1/2 cup teriyaki sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/4 teaspoon red pepper flakes (optional, for some heat)
  • Salt and pepper, to taste
  • Fresh cilantro leaves, chopped (optional, for garnish)

Instructions

Preheat grill to medium-high heat. Thread chicken, pineapple, and red pepper flakes (if using) onto bamboo skewers, leaving a small space between each piece.

In a small bowl, whisk together teriyaki sauce, brown sugar, soy sauce, rice vinegar, garlic, ginger, salt, and pepper.

Brush the mixture evenly onto both sides of the chicken and pineapple. Brush the grill with vegetable oil to prevent sticking.

Grill the skewers for 10-12 minutes, turning occasionally, or until the chicken is cooked through and slightly charred.

Serve hot, garnished with chopped cilantro leaves if desired.

Notes

Make sure to soak the bamboo skewers in water for at least 30 minutes before grilling to prevent them from catching fire. If you like a little heat, don’t be shy with the red pepper flakes – they add a nice kick! For easier grilling, make sure to leave a small space between each piece on the skewer.

If you want to get ahead, you can prep the teriyaki sauce mixture up to a day in advance, just store it in the fridge.

Don’t overcrowd the grill, cook the skewers in batches if necessary, to ensure even cooking. Let the chicken rest for a minute or two before serving, it will help the juices redistribute.

You can serve this with your favorite sides, like steamed veggies or a hearty salad.
