Ingredients

  • 250g halloumi cheese, cut into 1-inch cubes
  • 16 cherry tomatoes, halved
  • 16 Kalamata olives, pitted
  • 8 fresh rosemary sprigs
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • 1 tablespoon freshly chopped fresh parsley

Instructions

Start by preheating your grill to medium-high heat. Thread a cherry tomato, a piece of halloumi cheese, an olive, a sprig of rosemary, and another cherry tomato onto each of 8 wooden skewers.

In a small bowl, whisk together the olive oil, garlic, salt, and pepper.

Brush the mixture evenly over both sides of the halloumi cubes. Place the skewers on the grill and cook for about 3-4 minutes per side, or until the halloumi is golden brown.

Remove the skewers from the grill and sprinkle with parsley.

Serve immediately and hot, garnished with extra parsley if desired.

Notes

Make sure to soak the wooden skewers in water for at least 30 minutes prior to grilling to prevent them from catching fire. Fresh rosemary sprigs can be substituted with thyme or oregano if you prefer.

For a spicy kick, add a pinch of red pepper flakes to the olive oil and garlic mixture.

If using wooden skewers, be gentle when threading the ingredients to avoid breaking the skewer. Try to keep the halloumi cubes relatively uniform in size so they grill evenly.
