Ingredients

  • 250g halloumi cheese, cut into 1-inch cubes
  • 1 large ripe watermelon, cut into 1-inch cubes
  • 1/4 cup fresh mint leaves, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 10-12 wooden skewers, soaked in water for 30 minutes
  • Fresh mint leaves for garnish, optional

Instructions

Thread a cube of halloumi cheese, a cube of watermelon, and a few chopped fresh mint leaves onto each of the 10-12 wooden skewers, leaving a small space between each piece.

In a small bowl, whisk together olive oil, lemon juice, salt, and pepper to make the dressing.

Brush the dressing evenly onto the halloumi cheese cubes.

Preheat your grill to medium-high heat.

Grill the skewers for 2-3 minutes per side, or until the cheese is golden brown and slightly charred.

Notes

Use a ripe but firm watermelon for the best results – you want it to hold its shape on the skewer.
