Ingredients

  • 1 cup grilled corn kernels (from about 4 ears of corn)
  • 3 lbs ripe tomatoes, diced
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup chopped red onion
  • 1 jalapeno pepper, seeded and finely chopped
  • 2 tablespoons olive oil
  • 2 tablespoons freshly squeezed lime juice
  • 1 teaspoon honey
  • Salt and pepper to taste
  • 1/4 teaspoon ground cumin (optional)
  • Feta cheese, crumbled (optional)

Instructions

In a large bowl, combine the grilled corn kernels, diced tomatoes, chopped cilantro, chopped red onion, and chopped jalapeno pepper.

In a small bowl, whisk together the olive oil, lime juice, honey, salt, pepper, and ground cumin (if using).

Pour the dressing over the corn mixture and toss to combine.

Taste and adjust the seasoning as needed.

Cover and refrigerate for at least 30 minutes to allow the flavors to meld.

Just before serving, sprinkle with crumbled feta cheese (if using).

Serve chilled or at room temperature.

Notes

Grilled corn can be made ahead of time, but try to use it within a day or so for the best flavor. If you can’t find ripe tomatoes, you can use cherry tomatoes or grape tomatoes instead.

Don’t seed the jalapeno if you like a little extra heat.

If you’re not a fan of cilantro, you can substitute with chopped parsley or basil. For a lighter vinaigrette, reduce the olive oil to 1 tablespoon.

If you’re making this salad ahead, wait to add the feta cheese until just before serving so it stays crumbly.

To make this recipe more substantial, add some cooked chicken, beans, or avocado. This salad makes a great side dish, but it’s also perfect for a light lunch or dinner.
