Ready Time

Yields

4 servings

Ingredients

  • 1 cup cooked black beans
  • 1 cup frozen corn kernels, thawed
  • 1 red bell pepper, diced
  • 1 small red onion, diced
  • 1 jalapeño pepper, seeded and finely chopped
  • 1/4 cup olive oil
  • 2 tablespoons freshly squeezed lime juice
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste
  • Chopped fresh cilantro, for garnish
  • Feta cheese, crumbled (optional)

Instructions

Preheat your grill to medium-high heat.

Grill the corn kernels for about 5 minutes per side, or until slightly charred.

Remove the corn from the grill and let it cool.

In a large bowl, combine the cooled corn, black beans, diced red bell pepper, and diced red onion.

In a small bowl, whisk together olive oil, lime juice, ground cumin, smoked paprika, salt, and pepper.

Pour the dressing over the corn mixture and toss to combine.

Stir in the chopped jalapeño pepper.

Garnish with chopped fresh cilantro and crumbled feta cheese, if using.

Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.

Serve the salad chilled, dividing it among four plates.

Notes

For this recipe, make sure to thaw the frozen corn kernels beforehand to ensure they’re ready to grill. If you prefer a milder heat, you can always use just half of the jalapeño or omit the seeds and membranes, which contain most of the heat.

Don’t over-grill the corn – a slight char is what you’re aiming for.

The smoked paprika adds a nice depth of flavor, but feel free to substitute with regular paprika if you don’t have the smoked variety on hand. Finally, the 30-minute refrigeration time is important, so be patient and let those flavors meld together!
