Ready Time

45 mins

10 servings

  • 1 1/2 pounds boneless, skinless chicken breasts, cut into 10 equal pieces
  • 2 cups mixed greens (arugula, spinach, lettuce)
  • 10 slices of fresh strawberries, hulled and sliced
  • 1 cup crumbled blue cheese (or feta cheese)
  • 1/2 cup chopped pecans (or walnuts)
  • 1/2 cup balsamic glaze (or reduced balsamic vinegar)
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper, to taste

Preheat your grill to medium-high heat. Season the chicken breasts with salt and pepper.

Grill the chicken for 5-7 minutes per side, or until cooked through.

Let it rest for a few minutes before slicing into thin strips. In a large bowl, combine the mixed greens, sliced strawberries, crumbled blue cheese, and chopped pecans.

In a small bowl, whisk together the balsamic glaze, olive oil, honey, Dijon mustard, salt, and pepper to make the dressing.

To assemble the salads, place a portion of the greens mixture onto a plate, top with sliced grilled chicken, and drizzle with the balsamic dressing. Repeat the process to make 9 more salads, and serve immediately.

For a more substantial salad, use 2 pounds of chicken breasts and cut them into 12 pieces.

This will give you bigger portions and more protein-packed salads.

If using feta instead of blue cheese, be aware that it will give a slightly tangier flavor to your salad.

Make sure to toast the pecans or walnuts in a 350°F oven for 5-7 minutes to bring out their flavor and crunch.

For a lighter dressing, use 1 tablespoon of balsamic glaze and 1 tablespoon of olive oil.

Keep the grilled chicken strips warm while you assemble the salads to ensure everything stays juicy and fresh.

This salad is perfect for a summer gathering or potluck.

Prepare the components ahead of time and assemble just before serving.

You can substitute other types of nuts or seeds, like almonds or pumpkin seeds, if you prefer.

If you can’t find balsamic glaze, reduce 1 cup of balsamic vinegar on low heat until thickened to make your own glaze.

This salad is a great way to use up ripe strawberries, so feel free to use more or less depending on their size and your taste.
