Ready Time

1 hrs 50 mins

10 servings

  • 1 1/2 pounds boneless, skinless chicken breast, cut into 1 1/2-inch pieces
  • 1/2 cup extra-virgin olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 10 wooden skewers, soaked in water for at least 30 minutes
  • 1/4 cup crumbled feta cheese, for serving (optional)
  • Pita bread, for serving (optional)
  • Tzatziki sauce, for serving (optional)

Preheat your grill to medium-high heat.

In a large bowl, whisk together olive oil, garlic, lemon juice, red wine vinegar, oregano, salt, and black pepper.

Add the chicken pieces to the bowl and toss to coat with the marinade.

Cover the bowl with plastic wrap and refrigerate for at least 30 minutes or up to 2 hours.

Thread 4-5 chicken pieces onto each of the 10 wooden skewers, leaving a small space between each piece.

Grill the skewers for 8-10 minutes, turning occasionally, or until the chicken is cooked through.

Serve hot with feta cheese, pita bread, and tzatziki sauce if desired.

Make sure to soak those wooden skewers for at least 30 minutes – you don’t want them catching fire on the grill! Also, don’t overcrowd the skewers, leave a little space between each piece of chicken for even cooking. If you’re short on time, 30 minutes of marinating time will still give you great flavor, but if you can spare it, 2 hours will really make those flavors pop! Also, be gentle when turning the skewers on the grill, you don’t want to knock off any of that delicious chicken.

Feta cheese, pita bread, and tzatziki sauce are all optional but highly recommended – they really make the dish! And don’t be afraid to get creative with your toppings, this recipe is very flexible.
