  • 1 pound boneless, skinless chicken breast or thighs, cut into 1-inch pieces
  • 1/2 cup pineapple chunks (fresh or canned)
  • 1/2 cup red onion, cut into 1-inch pieces
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup brown sugar
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 10 bamboo skewers, soaked in water for at least 30 minutes

Instructions

Preheat your grill to medium-high heat.

Thread a piece of chicken, a pineapple chunk, a red onion piece, and a cherry tomato half onto each bamboo skewer, leaving a little space between each piece.

Repeat the process until all the ingredients are used up.

In a small bowl, whisk together brown sugar, olive oil, garlic, ginger, salt, and black pepper to make the glaze.

Brush the glaze evenly onto both sides of each skewer, making sure all the pieces are coated.

Notes
