Ready Time

45 mins

5 servings

  • 1 pound boneless, skinless chicken breast or thighs, cut into 1-inch pieces
  • 1/2 cup pineapple chunks (fresh or canned)
  • 1/2 cup red onion, cut into 1-inch pieces
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup brown sugar
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 10 bamboo skewers, soaked in water for at least 30 minutes

Preheat your grill to medium-high heat.

Thread a piece of chicken, a pineapple chunk, a red onion piece, and a cherry tomato half onto each bamboo skewer, leaving a little space between each piece.

Repeat the process until all the ingredients are used up.

In a small bowl, whisk together brown sugar, olive oil, garlic, ginger, salt, and black pepper to make the glaze.

Brush the glaze evenly onto both sides of each skewer, making sure all the pieces are coated.

Place the skewers on the grill and cook for 8-10 minutes per side, or until the chicken is cooked through and slightly charred.

Serve hot, garnished with fresh cilantro or parsley, if desired.

Make sure to soak the bamboo skewers in water for at least 30 minutes before grilling to prevent them from burning. Cut the chicken, pineapple, red onion, and cherry tomatoes into similar-sized pieces so they cook evenly on the grill.

If using canned pineapple, drain the liquid and pat dry with paper towels before using.

Don’t overcrowd the skewers, leaving a little space between each piece to ensure everything cooks properly. You can prep the glaze ahead of time and store it in the fridge for up to a week.

If you prefer a more caramelized glaze, brush the skewers with the glaze during the last 2-3 minutes of grilling.

These skewers are perfect for a quick and easy dinner or as an appetizer for a party – you can easily double or triple the recipe as needed.
