  • 2 1/2 pounds boneless, skinless chicken breast, cut into 1-inch pieces
  • 5 cups curly kale, stems removed and discarded, leaves cut into 2-inch pieces
  • 2 cups cherry tomatoes, halved
  • 1 cup crumbled feta cheese
  • 1 cup chopped pecans
  • 1/2 cup dried cranberries
  • 1/2 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Preheat grill to medium-high heat.

Season the chicken with salt and pepper.

Grill the chicken for 5-7 minutes per side, or until cooked through.

Let it rest for a few minutes before slicing into strips.
