Ready Time

45 mins

9 servings

  • 1 1/2 pounds boneless, skinless chicken breasts, cut into 1-inch strips
  • 3 large onions, sliced
  • 3 large bell peppers (any color), sliced
  • 2 large zucchinis, sliced
  • 2 large yellow squash, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper, to taste
  • 9 small flour tortillas
  • Optional toppings: avocado, sour cream, shredded cheese, salsa, cilantro

Preheat your grill to medium-high heat.

In a large bowl, whisk together olive oil, cumin, chili powder, paprika, and cayenne pepper.

Add the chicken to the bowl and toss to coat.

Let it marinate for at least 15 minutes.

Grill the chicken for 5-7 minutes per side, or until it reaches an internal temperature of 165°F.

Transfer the cooked chicken to a plate and cover with foil to keep warm.

In the same grill, add the sliced onions, bell peppers, zucchinis, and yellow squash.

Cook for 5-7 minutes per side, or until the vegetables are tender and lightly charred.

Warm the flour tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.

Assemble the fajitas by slicing the grilled chicken and vegetables into thin strips.

Place a portion of the chicken and vegetables onto a tortilla and add your desired toppings.

Serve immediately and repeat for the remaining 8 servings.

For marinating the chicken, you can adjust the time to at least 30 minutes or up to 2 hours in the refrigerator for more flavor absorption. Make sure to not overcrowd the grill when cooking the vegetables; you may need to cook them in batches.

If you prefer a bit of char on your vegetables, you can grill them for an additional 1-2 minutes per side.

You can also add some garlic powder or minced garlic to the marinade for extra flavor. To speed up the cooking process, you can grill the chicken and vegetables simultaneously, just keep an eye on their cooking time.

For leftovers, store the cooked chicken and vegetables separately in airtight containers in the refrigerator for up to 3 days.

Reheat them in the microwave or oven before assembling the fajitas.
