  • boneless, skinless chicken breasts, cut into 1-inch pieces (1 1/2 pounds)
  • cherry tomatoes, halved (2 cups)
  • fresh mozzarella balls, sliced into 1/4-inch thick rounds (8 ounces)
  • fresh basil leaves (1/4 cup)
  • olive oil (2 tablespoons)
  • balsamic vinegar (2 tablespoons)
  • salt (to taste)
  • pepper (to taste)
  • bamboo skewers, soaked in water for at least 30 minutes
