Ready Time

40 mins

Yields

8 servings

Ingredients

  • boneless, skinless chicken breasts, cut into 1-inch pieces (1 1/2 pounds)
  • cherry tomatoes, halved (2 cups)
  • fresh mozzarella balls, sliced into 1/4-inch thick rounds (8 ounces)
  • fresh basil leaves (1/4 cup)
  • olive oil (2 tablespoons)
  • balsamic vinegar (2 tablespoons)
  • salt (to taste)
  • pepper (to taste)
  • bamboo skewers, soaked in water for at least 30 minutes

Instructions

Preheat your grill to medium-high heat.

Thread a chicken piece, a cherry tomato half, a mozzarella round, and a basil leaf onto each bamboo skewer, leaving a small space between each piece.

Brush both sides of the chicken and vegetables with olive oil.

Season with salt and pepper to taste.

Grill the skewers for 10-12 minutes, turning occasionally, or until the chicken is cooked through and slightly charred.

Meanwhile, whisk together balsamic vinegar and a pinch of salt in a small bowl.

Brush the balsamic glaze onto the grilled skewers during the last minute of cooking.

Serve hot, garnished with additional basil leaves if desired.

Notes

Use high-quality chicken breasts for the best flavor and texture.

Make sure to pat the chicken dry with paper towels before cutting it into pieces to remove excess moisture.

For easier threading, make sure the chicken pieces are roughly the same size as the cherry tomato halves and mozzarella rounds.

Don’t overcrowd the skewers – leave a small space between each piece for even cooking and to prevent steaming instead of grilling.

If using wooden skewers, be sure to soak them in water for at least 30 minutes to prevent them from catching fire on the grill.

To prevent the mozzarella from melting too much, grill the skewers over medium-high heat for the shortest amount of time possible while still cooking the chicken through.

For a more intense balsamic glaze, reduce the vinegar in a saucepan over low heat until thick and syrupy before whisking in salt.

These skewers are perfect for a summer dinner party or potluck – simply grill the skewers, brush with balsamic glaze, and serve hot.
