Ready Time

45 mins

10 servings

  • 1 1/2 pounds boneless, skinless chicken breasts, cut into 1-inch pieces
  • 10 cups romaine lettuce, washed and torn into bite-sized pieces
  • 3/4 cup homemade or store-bought Caesar dressing
  • 2 cups homemade or store-bought croutons
  • 1 cup shaved Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cloves garlic, minced
  • 1 tablespoon freshly squeezed lemon juice
  • 1/4 cup chopped fresh parsley

Preheat your grill to medium-high heat. In a small bowl, whisk together olive oil, minced garlic, salt, and black pepper.

Brush the mixture evenly onto both sides of the chicken pieces.

Grill the chicken for 5-6 minutes per side, or until cooked through. Let the chicken rest for a few minutes before slicing it thinly.

In a large bowl, combine the romaine lettuce, shaved Parmesan cheese, and croutons.

In a small bowl, whisk together Caesar dressing and freshly squeezed lemon juice. Pour the dressing mixture over the salad and toss to combine.

Slice the grilled chicken into thin strips and add it to the salad.

Toss gently to distribute the chicken evenly. Sprinkle chopped fresh parsley on top and serve immediately.

For a more intense garlic flavor, use 3 cloves instead of 2, but be careful not to overpower the dish. If using homemade Caesar dressing, make sure it’s at room temperature before whisking it with lemon juice.

For croutons, you can use store-bought or bake your own in the oven with olive oil and seasonings until crispy.

To ensure juicy chicken, don’t overcrowd the grill and cook the chicken in batches if necessary. If you prefer a lighter dressing, start with half the amount of Caesar dressing and adjust to taste.

For a more substantial salad, add some protein-rich grilled shrimp or sliced avocado.
