  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces

  • 3 ripe avocados, diced
  • 6 large tomatoes, diced
  • 1 large head of lettuce, chopped
  • 3 tablespoons freshly squeezed lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon Dijon mustard
  • Salt and pepper, to taste
  • 6 tablespoons crumbled blue cheese (optional)
  • 4 large eggs, hard-boiled and sliced (optional)
  • Fresh cilantro or parsley, chopped (optional)


Preheat your grill to medium-high heat and season the chicken with salt and pepper. Grill the chicken for 5-7 minutes per side, or until cooked through.

Let it rest for a few minutes before chopping it into bite-sized pieces.

Meanwhile, cook the bacon slices in a large skillet over medium heat until crispy. Remove the bacon from the skillet and set it aside on a paper towel-lined plate.

Leave the grease in the skillet.
