Greek Stuffed Grape Leaves

Ingredients

  • 2/3 cup olive oil
  • 1 pound onions, chopped
  • 1 1/3 cups uncooked white rice
  • 1 1/2 lemons, juiced
  • 1 1/2 tablespoons chopped fresh dill
  • 1/3 cup chopped fresh parsley
  • 1 tablespoon pine nuts
  • 2/3 (8 ounce) jar grape leaves, drained and rinsed

Instructions

Begin by preheating your oven to 375 degrees Fahrenheit (190 degrees Celsius). Prepare a large saucepan over medium heat and add 2 tablespoons of olive oil.

Sauté chopped onions in the oil until they soften.

Add 1 1/3 cups of uncooked white rice to the saucepan and cook until it takes on a light brown color. Pour in 3 1/2 cups of water and half of the lemon juice (1 1/2 lemons’ worth).

Reduce the heat to low, cover the saucepan, and simmer until all the liquid has been absorbed and the rice is tender, which should take about 20 minutes.

Once cooked, remove the saucepan from the heat and stir in 1 1/2 tablespoons of chopped fresh dill, 1/3 cup of chopped fresh parsley, and 1 tablespoon of pine nuts. Now it’s time to prepare the grape leaves.

Remove the stems from each grape leaf and place 1 tablespoon of the rice mixture in the center.

Fold in the sides of the grape leaf and roll it up tightly. Arrange the rolled grape leaves seam-side down in a baking dish.

Pour the remaining olive oil and lemon juice over the grape leaves, and add enough water to cover half of them.

Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes. Once the grape leaves are done baking, your Greek Stuffed Grape Leaves are ready to serve.
