Yields

4 servings

Ingredients

  • 1 1/2 cups cooked chickpeas
  • 1/2 cup diced cucumber
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon dried oregano
  • Salt and pepper, to taste
  • 4 tablespoons extra-virgin olive oil

Instructions

In a large bowl, combine the cooked chickpeas, diced cucumber, cherry tomatoes, olives, and red onion.

In a small bowl, whisk together the red wine vinegar, Dijon mustard, dried oregano, salt, and pepper to make the dressing.

Slowly pour the dressing over the chickpea mixture and toss to coat.

Stir in the crumbled feta cheese until well combined.

Drizzle the extra-virgin olive oil over the salad and toss again to coat.

Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.

Just before serving, give the salad a good stir and adjust the seasoning if needed.

Serve chilled, garnished with additional olives or oregano if desired.

Notes

For a more intense flavor, let the salad refrigerate for a few hours or even overnight. If using canned chickpeas, drain and rinse them well before using.

To make ahead, prepare the salad up to a day in advance, but wait to add the feta cheese until just before serving.

For a lighter vinaigrette, reduce the amount of olive oil or add some water to thin it out.
