Cheesy Mexican Bean And Ham Rolls

Ingredients

  • 1 1/2 cups dried pinto beans
  • 3 tablespoons olive oil
  • 2 1/4 teaspoons salt
  • 25 slices white whole wheat bread
  • 1 1/2 cups shredded queso blanco
  • 1 cup chile-garlic sauce

Instructions

To prepare the beans, begin by soaking dried pinto beans in water for an hour.

Drain and rinse them thoroughly.

Next, add the beans to a saucepan with fresh water and bring it to a boil.

Reduce heat and simmer for two hours or until the beans are tender.

Drain the beans, reserving half a cup of the cooking liquid.

In a skillet, heat olive oil and add the drained beans and salt.

Fry the beans over medium-high heat, stirring and mashing them often until they become very soft, which takes about 5 to 7 minutes.

Preheat your oven to the broil setting with the rack placed about 6 inches from the heat source.

Spread an equal portion of the mashed beans onto each slice of white whole wheat bread.

Place the bread slices on a baking sheet and broil them until the beans are warmed through and the cheese is melted, which should take around 3 minutes.
