  • 4 cups fresh baby spinach leaves
  • 1 cup fresh or frozen blueberries
  • 1 cup crumbled feta cheese
  • 1/2 cup chopped pecans
  • 1/2 cup crumbled cooked bacon
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste


In a large bowl, combine the fresh baby spinach leaves and set aside.

In a separate bowl, whisk together the olive oil, apple cider vinegar, and Dijon mustard until well combined.

Add salt and pepper to taste.

In another bowl, mix together the crumbled feta cheese, chopped pecans, and crumbled cooked bacon.
