Yields

6 servings

Ingredients

  • 4 cups fresh baby spinach leaves
  • 1 cup fresh or frozen blueberries
  • 1 cup crumbled feta cheese
  • 1/2 cup chopped pecans
  • 1/2 cup crumbled cooked bacon
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

In a large bowl, combine the fresh baby spinach leaves and set aside.

In a separate bowl, whisk together the olive oil, apple cider vinegar, and Dijon mustard until well combined.

Add salt and pepper to taste.

In another bowl, mix together the crumbled feta cheese, chopped pecans, and crumbled cooked bacon.

Add the blueberries to the cheese mixture and gently stir until they’re evenly distributed.

Pour the dressing over the spinach leaves and toss to coat.

Top the spinach with the blueberry-cheese mixture and serve immediately.

Divide the salad among 6 plates and serve chilled.

Notes

For a sweeter spin, try using fresh blueberries in the summer months when they’re in season.

If using frozen, just thaw and pat dry with paper towels before using.

Don’t overdress the spinach – you want the leaves to stay crisp.

If you’re not a fan of feta, goat cheese or even crumbled blue cheese work nicely too.

To toast the pecans, bake in a 350°F oven for about 5 minutes, or until fragrant and lightly browned.

This salad is perfect for a brunch or light lunch, and can be easily doubled or tripled for a crowd.

Be sure to prep all the ingredients ahead of time, so you can simply assemble the salad just before serving.
