Notes

You can customize this recipe to fit your taste by adding or subtracting ingredients. If you like a little more heat, add some diced serrano peppers or hot sauce.

For a smokier flavor, add some diced chipotle peppers in adobo sauce.

If using frozen corn kernels, make sure to thaw them first and pat them dry with a paper towel to remove excess moisture. Fresh corn kernels work beautifully in this recipe too, just be sure to remove the kernels from the cob.

The longer this salsa sits, the better the flavors meld together, so try to resist digging in immediately! If you can, make it a day ahead and refrigerate overnight for maximum flavor.

This salsa is perfect for topping tacos, grilled meats, veggies, or chips. You can also use it as a dip for vegetables or crackers.

It’s a great addition to any summer barbecue or potluck.
