  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels, fresh or frozen, thawed
  • 1 red bell pepper, diced
  • 1 small red onion, diced
  • 1 jalapeño pepper, seeded and finely chopped
  • 1/2 cup cilantro, chopped
  • 2 tablespoons lime juice
  • 1 teaspoon ground cumin
  • Salt and pepper, to taste

Combine black beans, corn kernels, red bell pepper, red onion, and jalapeño pepper in a large bowl. In a small bowl, whisk together lime juice and ground cumin.

Pour the lime juice mixture over the black bean mixture and stir until everything is well coated.

Stir in chopped cilantro. Season with salt and pepper to taste.

Cover and refrigerate for at least 30 minutes to allow the flavors to meld together.

Serve chilled or at room temperature.

You can customize this recipe to fit your taste by adding or subtracting ingredients. If you like a little more heat, add some diced serrano peppers or hot sauce.

For a smokier flavor, add some diced chipotle peppers in adobo sauce.

If using frozen corn kernels, make sure to thaw them first and pat them dry with a paper towel to remove excess moisture. Fresh corn kernels work beautifully in this recipe too, just be sure to remove the kernels from the cob.

The longer this salsa sits, the better the flavors meld together, so try to resist digging in immediately! If you can, make it a day ahead and refrigerate overnight for maximum flavor.

This salsa is perfect for topping tacos, grilled meats, veggies, or chips. You can also use it as a dip for vegetables or crackers.

It’s a great addition to any summer barbecue or potluck.
