Ingredients

  • 1 1/2 pounds boneless, skinless chicken breast, cut into 1-inch pieces
  • 3/4 cup BBQ sauce
  • 1 large red bell pepper, cut into 1-inch pieces
  • 1 large yellow bell pepper, cut into 1-inch pieces
  • 1 large onion, cut into 1-inch pieces
  • 2 large zucchinis, cut into 1-inch slices
  • 2 large yellow squash, cut into 1-inch slices
  • 20 bamboo skewers, soaked in water for at least 30 minutes

Instructions

Preheat your grill to medium-high heat.

Thread a piece of chicken, a piece of red bell pepper, a piece of yellow bell pepper, an onion piece, a zucchini slice, and a yellow squash slice onto each bamboo skewer.

Leave a little space between each piece to allow for even cooking.

Brush the grill with oil to prevent sticking.

Place the kabobs on the grill and cook for 10-12 minutes, turning occasionally, or until the chicken is cooked through.

After 5 minutes of grilling, brush the BBQ sauce evenly onto both sides of the chicken and vegetables.

Continue grilling for the remaining 5-7 minutes, or until the chicken is cooked through.

Serve hot, garnished with fresh parsley or cilantro, if desired.

Notes

Make sure to soak the bamboo skewers in water for at least 30 minutes before grilling to prevent them from catching fire. You can customize the veggies to your liking, but the bell peppers add a nice sweetness.

Don’t overcrowd the skewers, leaving space between each piece ensures even cooking.

Brushing the grill with oil beforehand prevents the kabobs from sticking. Keep an eye on the kabobs while grilling, turning occasionally to achieve those nice grill marks.
