Instructions

In a medium bowl, whisk together lime juice, olive oil, garlic, Dijon mustard, salt, and pepper to make the dressing. Set aside.

In a large bowl, combine the diced avocado and chopped cilantro.

Gently fold in the dressing until the avocado is well coated. In a separate bowl, toss the shrimp with a pinch of salt and pepper.

Heat a large skillet over medium-high heat.

Add the shrimp and cook for 2-3 minutes per side, until pink and cooked through. To assemble the wraps, place a large lettuce leaf on a flat surface.

Slice a cooked shrimp in half and place it on the center of the lettuce leaf.

Repeat with the remaining ingredients.
