1. Cauliflower Buffalo Bites


  • Bite-sized florets from a large cauliflower
  • 1 cup of breadcrumbs
  • One teaspoon salt
  • ½ cup of butter
  • ¼ cup of Buffalo Sauce or Frank's Red Hot Sauce

  • In a small saucepan, melt butter and buffalo sauce and mix
  • Pour the sauce into a small bowl
  • Take the salt and breadcrumbs and put those into a small bowl

  • 10 Corn Tortillas
  • One tablespoon olive oil

  • ¼ teaspoon ground black pepper
  • ⅛ teaspoon ground nutmeg
  • ¼ cup bread crumbs
  • ¼ cup finely grated Parmesan cheese

  • Boil, the elbow noodles in a large saucepan adding the salt in before the water, reaches a boil
  • Once the pasta reaches the desired consistency, drain the pan and put the noodles in a large bowl
  • In this bowl, pour in the milk, cream, all of the cheeses, the Emeril's Essence and the salt, pepper, and nutmeg. Stir all of the ingredients until combined.
  • Put the pasta mixture into a casserole dish
  • In a small bowl, combine the bread crumbs, Parmesan and melted butter and stir ingredients together
  • Sprinkle the bread crumb mixture over the noodles and put the dish in the air fryer basket.
  • Cook at 350 degrees for 30 minutes
  • Let the Mac and Cheese cool for 20 minutes before serving.

4. Fried Pickles with Spicy Dipping Sauce


  • 16-ounce jar of sour dill pickle wedges
  • One egg
  • ¼ cup of whole milk
  • ½ cup of flour
  • ½ teaspoon of salt
  • ½ teaspoon of garlic powder
  • ¼ cup Ranch Dressing
  • One teaspoon of Frank's Red Hot Sauce
  • ½ teaspoon sweet paprika

6. Kale Chips


  • One head of Kale
  • One tablespoon of Extra Virgin olive oil
  • One teaspoon of low-sodium soy sauce

  • Wash the pieces in the sink and then dry with a paper towel
